Homemade Ramen Recipe

Starting off my career as a food blogger, here we are with my infamous RAMEN RECIPE! I’ve never gotten this many requests for anything before. So here we go.

PS im obviously new at this whole recipe thing so I hope it’s easy enough to follow.

Let’s get to it.

Homemade Ramen Recipe

Everything you need for this recipe:

  • 1 cup yellow onion

  • 1/2 cup white miso paste

  • 1/2 cup red miso paste

  • 6 cloves of garlic

  • 2 tablespoons vegetable oil

  • Shittake mushrooms

  • 4 cups chicken stock

  • 2 cups unsweetened soy milk

  • 1/2 cup tahini

  • Soy sauce

STEP ONE: create miso paste blend

Add onion, both miso pastes, garlic, & vegetable oil to a food processor. I personally use a magic bullet but I highly suggest something a little nicer if you have it. Mix all ingredients and put aside.

STEP TWO: make broth

In a pot, add chopped shiitake mushrooms & a tablespoon or so of the miso paste we just made. Stir fry until they’re golden brown.

Then add your 4 cups of chicken stock and 2 cups of soy, and bring to a simmer. Once simmering, take around 3/4 cup of your miso paste mixture & place into a fine sieve. Lower the sieve into the broth and use any utensil to slowly dissolve the paste into the broth!

Discard whatever is left in the sieve and then pour your tahini right into the pot. Mix & let the soup simmer for another 5 min!

I like to add soy sauce for some extra saltiness, so taste & adjust to your liking!

AND THAT’S IT! It’s honestly super quick and I end up with tons and tons of leftovers. We like to add in tofu which we fry up with some of the miso paste as well. I’m absolutely obsessed with this homemade ramen to the point where I rarely even feel the need to go out and get it anymore! If you know me at all, you know how much that says!!!

I hope you guys will try out this recipe and send me pics of how it turned out on IG (@imtaramichelle)! Happy feasting!!!!
